A Sasquatcher's Skillet Recipe!



 

It started with the most picturesque drive along the Sea the Sky highway. Nestled between Vancouver and Whistler is the quint mountain town of Squamish, B.C. The views and vibes of this place are unbeatable.

As we pulled up to the campground we were greeted by, arguably the cutest guard dog ever...a Rottweiler named Cocoa. We were lucky enough to arrive early and have our pick of the perfect beach plot to settle for the evening. Surrounded by snow camped mountains and the sweet sounds of the rushing river.

Serenity on the riverbanks....we chopped, prepped, and collected our firewood. Time to make dinner!


Chicken Marabella ….Sasquatch style
 

You will need:

  • 1 onion -diced

  • 2 cloves of garlic -minced

  • 6 chicken thighs

  • 1/4 cup green olives -chopped

  • 1 cap full of capers

  • 3 medjool dates -chopped

  • 1/2 red wine vinegar

  • salt/pepper/paprika


Directions:

Add everything to a bag and let marinate for 1hr.

Once coals are heated, placed oiled skillet on campfire grate. Empty all contents of bag into the skillet, casually stir. Once chicken is cooked and onions are caramelized (about 25 min) you are ready to eat!

We served this along side of a mixture of seasoned potatoes and bell pepper, which we roasted in foil. Guaranteed this won't disappoint!
